Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon served over brown rice with garlic-sautéed green beans, finished with a squeeze of lemon and flaky sea salt.
INGREDIENTS
5 ounces Salmon Fillet
1/2 cup cooked Brown Rice
1.5 cups Green Beans
1.5 teaspoons Extra Virgin Olive Oil
2 cloves Garlic
1/2 tablespoon Lemon Juice
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until golden and crisp.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145°F then remove from the pan.
In the same skillet add the remaining olive oil and the trimmed green beans.
Sauté the green beans for 5 minutes then add the minced garlic and cook for 1 more minute until fragrant.
Warm the pre-cooked brown rice in a small bowl.
Plate the salmon alongside the brown rice and garlic green beans.
Drizzle the entire dish with fresh lemon juice and finish with a pinch of flaky sea salt.
