Heat the remaining 1 tsp of avocado oil in a large non-stick skillet over medium-high heat.
Add the tofu to the skillet in a single layer and sear for 3-4 minutes per side until a golden, crispy crust forms.
Divide the roasted vegetables and seared tofu between plates and serve immediately while hot.
