Herb & Cheese Stuffed Portobello Mushrooms
Savory ground turkey and spinach sautéed with aromatic herbs, stuffed into roasted portobello caps and topped with tangy, melted feta cheese.
INGREDIENTS
8 oz Ground turkey
2 large Portobello mushroom caps
1 oz Feta cheese
1 cup Fresh spinach
0.25 cup Yellow onion
1 clove Garlic
0.5 tbsp Extra virgin olive oil
1 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Gently wipe the mushroom caps clean with a damp paper towel and remove the stems and brown gills using a spoon.
In a large skillet, heat the olive oil over medium heat and sauté the diced onion and minced garlic until fragrant and translucent.
Add the ground turkey to the skillet, seasoning with sea salt, black pepper, and dried oregano, and cook until browned and fully cooked through.
Stir in the fresh spinach and cook for 1-2 minutes until just wilted, then remove the skillet from the heat.
Place the mushroom caps on the prepared baking sheet, gill-side up, and fill each generously with the turkey and spinach mixture.
Sprinkle the crumbled feta cheese over the top of the stuffed mushrooms.
Bake for 15-20 minutes until the mushrooms are tender and the cheese is slightly golden and melted.
