Pan-seared cauliflower gnocchi and tender chicken breast tossed in a vibrant, herbaceous basil pesto for a meal that is both satisfying and bright.
INGREDIENTS
5 oz Chicken breast
1 cup Cauliflower gnocchi
0.5 tbsp Extra virgin olive oil
0.5 cup Fresh basil
1 tbsp Pine nuts
1 tbsp Parmesan cheese
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Lemon juice
PREPARATION
Pulse the fresh basil, garlic, pine nuts, parmesan cheese, lemon juice, and half of the olive oil in a small food processor until a coarse paste forms.
Slice the chicken breast into bite-sized cubes and season them evenly with sea salt and black pepper.
Heat the remaining olive oil in a large non-stick skillet over medium-high heat.
Add the chicken to the skillet and sauté for 5-7 minutes until golden brown and cooked through, then remove and set aside.
In the same skillet, add the cauliflower gnocchi and cook for 8-10 minutes, stirring occasionally, until the exteriors are crispy and golden.
Return the cooked chicken to the skillet, add the prepared pesto, and toss everything together for 1 minute until the sauce is fragrant and coats the gnocchi evenly.
