Pan-Seared Salmon with Roasted Asparagus
Pan-seared salmon fillet with a crispy golden skin served alongside tender oven-roasted asparagus spears and a bright squeeze of fresh lemon.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus spears
0.5 tbsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 whole Lemon
PREPARATION
Preheat oven to 400°F and line a baking sheet with parchment paper.
Toss asparagus with half of the olive oil and a pinch of the sea salt and black pepper on the prepared sheet.
Roast the asparagus for 12-15 minutes until tender and slightly charred.
Season the salmon fillet with the garlic powder and the remaining sea salt and black pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for an additional 2-3 minutes until the fish is opaque and flakes easily with a fork.
Serve the salmon alongside the roasted asparagus and finish with a fresh squeeze of lemon juice.
