PREPARATION
Peel and cube the potato, then boil in salted water until tender, about 12 to 15 minutes.
While potatoes boil, mince the garlic and finely chop the chives.
Drain potatoes and mash with Greek yogurt, ghee, minced garlic, and half of the salt and pepper until creamy.
Pat the cod fillets dry with a paper towel and season both sides with the remaining salt and pepper.
Heat olive oil in a skillet over medium-high heat and sear the cod for 3 to 4 minutes per side until opaque and flaky.
