6 oz Firm tofu
0.25 cup Cooked basmati rice
0.5 cup Shelled edamame
0.5 cup Yellow onion
0.5 cup Broccoli florets
0.5 cup Red bell pepper
0.13 tbsp Extra virgin olive oil
2 tbsp Tamari
2 tbsp Nutritional yeast
1 tsp Minced garlic
1 tsp Minced ginger
0.25 tsp Sea salt

PREPARATION
Press the firm tofu between paper towels to remove excess moisture and cut into 1-inch cubes.
Heat the extra virgin olive oil in a large skillet over medium-high heat until shimmering.
Add the tofu cubes to the skillet and sauté for 8-10 minutes until golden brown and crispy on all sides.
Stir in the diced yellow onion, broccoli florets, and red bell pepper, cooking for 5 minutes until tender-crisp.
Add the minced garlic, minced ginger, and shelled edamame to the pan and sauté for 2 more minutes.
Pour in the tamari and sprinkle with nutritional yeast, sea salt, and black pepper, tossing to coat everything evenly.
Divide the warm basmati rice into serving bowls.
Top the fragrant rice with the tofu and vegetable mixture and serve immediately.
