Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared wild salmon served over a bed of creamy garlic-infused cauliflower mash alongside bright green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6.5 ounces Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1.5 cups Green Beans
1 teaspoon Extra Virgin Olive Oil
2 tablespoons Non-fat Plain Greek Yogurt
2 cloves Garlic, minced
Sea salt, black pepper, and lemon wedges to taste
PREPARATION
Place the cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While the cauliflower is steaming, add the green beans to the steamer for the last 5 minutes of cooking until they are bright green and crisp-tender.
Remove the cauliflower and garlic, then transfer to a bowl or food processor; add the Greek yogurt and a pinch of sea salt, mashing or blending until creamy and smooth.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side with a fresh squeeze of lemon juice.
