In a small bowl, toss the mango, bell pepper, onion, and half of the chopped cilantro with half of the lime juice to create the salsa.
Once the rice is finished, fluff it with a fork and stir in the remaining cilantro and the rest of the lime juice.
Slice the cooked chicken into strips and serve it over the lime rice, topped generously with the fresh mango cilantro salsa.
