Garlic Herb Roasted Chicken Thighs
Tender chicken thighs roasted with aromatic garlic and fresh rosemary, served alongside vibrant charred broccoli for a satisfying and wholesome meal.
INGREDIENTS
7 oz boneless skinless chicken thighs
1 tbsp extra virgin olive oil
2 clove garlic
1 tsp fresh rosemary
1 tsp fresh thyme
0.5 tsp sea salt
0.25 tsp black pepper
1.5 cup broccoli florets
1 tsp lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.
Mince the garlic cloves and finely chop the fresh rosemary and thyme leaves.
In a medium mixing bowl, combine the chicken thighs with half of the olive oil, the minced garlic, chopped herbs, sea salt, and black pepper, tossing until well coated.
Place the seasoned chicken thighs on one side of the prepared baking sheet.
Add the broccoli florets to the other side of the sheet, drizzle with the remaining olive oil and a small pinch of salt, then toss to coat.
Roast in the center of the oven for 20 to 25 minutes until the chicken reaches an internal temperature of 165°F and the broccoli is tender with crispy, charred edges.
Remove from the oven and drizzle the fresh lemon juice over the chicken and broccoli before serving hot.
