7 oz Wild Sockeye Salmon
1.5 oz Brown Rice Pasta
2 cups Fresh Spinach
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Lemon Juice
1/2 cup Fresh Strawberries
PREPARATION
Bring a pot of salted water to a boil and cook the brown rice pasta according to package directions until al dente.
While the pasta cooks, pat the salmon dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Remove the salmon from the pan and set aside.
In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
Add the fresh spinach to the skillet and toss until just wilted.
Drain the pasta and add it to the skillet with the spinach and garlic, tossing with lemon juice to combine.
