Caprese Chicken with Balsamic Glaze
Pan-seared chicken breast topped with melty fresh mozzarella and vine-ripened tomatoes, finished with a luscious balsamic glaze and fragrant basil.
INGREDIENTS
5 oz Chicken breast
1 oz Fresh mozzarella cheese
0.5 cup Roma tomatoes
1 tbsp Balsamic glaze
1 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
5 leaves Fresh basil
1 cup Asparagus spears
PREPARATION
Season the chicken breast with sea salt, black pepper, and garlic powder on both sides.
Heat the olive oil in a medium skillet over medium-high heat.
Add the chicken to the skillet and cook for 5-6 minutes per side until golden and cooked through.
While chicken cooks, snap the woody ends off the asparagus and steam or lightly sauté them until tender-crisp.
Reduce the heat to low, then place the fresh mozzarella slices and diced Roma tomatoes on top of the chicken.
Cover the skillet for 1-2 minutes until the mozzarella is beautifully melted.
Transfer the chicken and asparagus to a plate, drizzle with the balsamic glaze, and garnish with fresh basil leaves.
