PREPARATION
Preheat your oven to 400°F.
Place the cherry tomatoes on a small baking sheet and toss with half of the olive oil, a pinch of sea salt, and a pinch of black pepper.
Roast the tomatoes for 12-15 minutes until they are soft and beginning to burst.
Season the chicken breast evenly on both sides with the dried oregano and the remaining sea salt and black pepper.
Heat the remaining olive oil in an oven-safe skillet over medium-high heat.
Sear the chicken for 5-6 minutes per side until golden brown and the internal temperature reaches 165°F.
Place the fresh mozzarella slices on top of the chicken and transfer the skillet to the oven for 2 minutes to melt the cheese.
Arrange a bed of fresh baby arugula on a plate and place the chicken and roasted tomatoes on top.
