Loaded Baked Potatoes with Bacon and Chives
Oven-roasted potato stuffed with savory lean turkey and crispy bacon, topped with a dollop of cool, creamy Greek yogurt and fresh chives.
INGREDIENTS
1 medium Russet potato
5 oz Ground turkey
2 slices Center-cut bacon
0.25 cup Nonfat Greek yogurt
0.25 oz Sharp cheddar cheese
1 tbsp Fresh chives
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Olive oil
PREPARATION
Preheat your oven to 400°F (200°C). Scrub the Russet potato clean and pat dry.
Prick the potato several times with a fork, rub with olive oil and a pinch of sea salt, then bake directly on the oven rack for 45-60 minutes until the skin is crisp and the center is tender.
While the potato bakes, place the bacon slices in a cold skillet and cook over medium heat until crispy. Remove, drain on a paper towel, and crumble into small pieces.
In the same skillet (drained of excess fat), add the ground turkey. Season with garlic powder, sea salt, and black pepper. Sauté until fully browned and cooked through.
Once the potato is done, slice it open lengthwise and fluff the inside with a fork.
Stuff the potato with the seasoned ground turkey and sprinkle the shredded cheddar cheese on top while it is still hot so it melts slightly.
Finish by topping with a dollop of Greek yogurt, the crumbled bacon, and freshly chopped chives.
