In the same skillet, melt the ghee and add the sliced cremini mushrooms and minced garlic, sautéing for 2 minutes until the garlic is aromatic.
Stir the remaining sea salt, black pepper, and fresh thyme into the mushroom mixture.
Place the chicken breast back into the skillet, nestling it among the mushrooms, and drizzle everything with lemon juice.
Transfer the skillet to the oven and roast for 10-12 minutes until the chicken is cooked through and the mushrooms are tender.
Serve the roasted garlic butter mushrooms and chicken over the warm cooked quinoa.
