Slice the baked potato in half lengthwise and scoop out the flesh, leaving a thin shell about a quarter-inch thick.
Place the skins on a baking sheet and bake for 5 minutes per side until the edges are crispy.
Spoon the turkey chili mixture into the potato shells and sprinkle with the shredded cheddar cheese.
Return the skins to the oven for 3-5 minutes until the cheese is melted and bubbly.
Garnish each skin with a dollop of Greek yogurt and sliced green onions before serving.
