Gently mix until a soft dough forms, being careful not to overwork it.
Turn the dough onto a lightly floured surface and roll into long ropes about 1/2 inch thick.
Cut the ropes into 1-inch pieces and set aside.
Bring a large pot of salted water to a boil and cook the gnocchi until they float to the surface, then remove with a slotted spoon.
In a large skillet over medium heat, melt the ghee and add the prosciutto, cooking until crispy.
Add the sage leaves to the skillet and fry for 1 minute until fragrant.
Add the cooked gnocchi to the skillet and sauté for 2-3 minutes until lightly browned and coated in the sauce.
