Remove the potato from the oven and let it cool slightly before slicing it in half lengthwise.
Scoop out the potato flesh, leaving about a 1/4-inch thick shell to maintain the structure of the skin.
Place the skins back on a baking sheet and bake for another 5-10 minutes until the edges are golden and extra crunchy.
Divide the turkey chili evenly between the two potato halves and top each with the shredded cheddar cheese.
Return the skins to the oven for 3-5 minutes until the cheese is completely melted and bubbly.
Finish each potato skin with a dollop of Greek yogurt and a sprinkle of fresh green onions before serving.
