Spicy Gochujang Chicken Stir-Fry
Sautéed chicken breast and crisp bell peppers tossed in a pungent gochujang glaze, served over fluffy brown rice for a satisfying kick.
INGREDIENTS
5 oz Chicken breast
1 tbsp Gochujang
1 tbsp Tamari
1 tsp Raw honey
1 tsp Toasted sesame oil
1 tsp Avocado oil
1 cup Broccoli florets
0.5 cup Red bell pepper
1 clove Garlic
1 tsp Fresh ginger
0.25 cup Cooked brown rice
0.5 tsp Sesame seeds
1 stalk Green onion
0.13 tsp Sea salt
0.13 tsp Black pepper
PREPARATION
In a small bowl, whisk together the gochujang, tamari, raw honey, and toasted sesame oil until smooth.
Season the chicken breast pieces with sea salt and black pepper.
Heat the avocado oil in a large skillet or wok over medium-high heat until shimmering.
Add the chicken to the skillet and sauté for 5-6 minutes until golden brown and cooked through.
Remove the chicken from the pan and set aside; add the broccoli and red bell pepper to the same skillet.
Stir-fry the vegetables for 3-4 minutes, then add the minced garlic and fresh ginger, cooking for another minute until fragrant.
Return the chicken to the skillet and pour the gochujang sauce over the mixture, tossing to coat everything in the glossy glaze.
Serve the stir-fry over the cooked brown rice and garnish with sliced green onion and sesame seeds.
