PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Cut the yellow potato into uniform wedges and toss them in a bowl with 1 tsp of olive oil and half of the sea salt and black pepper.
Spread the potatoes on the baking sheet and roast for 25-30 minutes, flipping halfway through, until the edges are golden and crispy.
Pat the sirloin steak dry with a paper towel and season both sides with the remaining sea salt and black pepper.
