Finely dice the jalapeño, removing the seeds and membranes if you prefer a milder heat.
In a medium mixing bowl, combine the ground beef, sea salt, black pepper, and garlic powder until just incorporated.
Divide the beef into two equal portions and flatten them into small discs.
Place 0.5 oz of goat cheese and half of the diced jalapeños in the center of each disc, then fold the beef around the filling to seal it completely.
Wrap one slice of center-cut bacon around each patty, securing the ends with a toothpick if needed.
Heat the avocado oil in a cast-iron skillet over medium-high heat and sear the sliders for 2-3 minutes per side until the bacon is golden and starting to crisp.
Transfer the skillet to the oven and bake for 5-7 minutes until the beef is cooked through and the bacon is fully rendered.
While the sliders rest for 2 minutes, lightly toast the sprouted grain slider buns.
Assemble the sliders on the toasted buns and serve immediately.
