Chicken and Provolone Sub Sandwich
Pan-seared chicken strips and sautéed peppers nestled in a toasted roll with melted, gooey provolone cheese.
INGREDIENTS
4 oz Chicken breast
1 whole Whole grain sub roll
1.5 oz Provolone cheese
0.5 cup Green bell pepper
0.25 cup Yellow onion
0.5 tbsp Olive oil
1 tbsp Avocado oil mayonnaise
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
0.25 tsp Dried oregano
PREPARATION
Slice the chicken breast into thin strips and season evenly with sea salt, black pepper, garlic powder, and dried oregano.
Heat the olive oil in a large skillet over medium-high heat.
Add the sliced green bell pepper and yellow onion to the skillet, sautéing until they are softened and slightly charred.
Push the vegetables to the side of the pan and add the chicken strips, cooking for 5-7 minutes until golden brown and fully cooked.
Slice the sub roll open and toast it under a broiler or in the skillet until the edges are golden and crisp.
Spread the avocado oil mayonnaise on the inside of the toasted sub roll.
Fill the roll with the chicken and vegetable mixture, then layer the provolone cheese on top.
Place the sandwich under the broiler for 1-2 minutes until the cheese is melted and bubbly.
