Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served over nutty brown rice with garlic-infused green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1/2 cup cooked Brown Rice
1.5 cups fresh Green Beans
2 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
Fresh Lemon wedges
Sea salt and black pepper to taste
PREPARATION
Prepare the brown rice according to package instructions and set aside.
Pat the salmon fillet dry with paper towels and season both sides with sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
While the salmon cooks, steam the green beans in a small amount of water for 3-4 minutes until tender-crisp.
Drain the green beans and return the pan to medium heat with the remaining teaspoon of olive oil and minced garlic.
Sauté the garlic for 30 seconds until fragrant, then toss the green beans in the garlic oil to coat.
Serve the seared salmon over the brown rice with the garlic green beans on the side and a fresh squeeze of lemon juice.
