Herb-Crusted Steak with Roasted Vegetables
Pan-seared sirloin steak coated in a fragrant herb crust, served with a colorful medley of tender-crisp roasted broccoli and bell peppers.
INGREDIENTS
6 oz Top sirloin steak
1 tbsp Extra virgin olive oil
1 cup Broccoli florets
1 cup Red bell pepper strips
1 tsp Dried rosemary
1 tsp Dried thyme
1 tsp Garlic powder
0.5 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the broccoli florets and bell pepper strips with 0.5 tbsp of olive oil and a pinch of salt and pepper.
Roast the vegetables for 15 to 20 minutes until they are tender and have slightly charred edges.
Pat the steak dry with a paper towel and rub both sides with dried rosemary, dried thyme, garlic powder, sea salt, and black pepper.
Heat the remaining 0.5 tbsp of olive oil in a cast-iron skillet over medium-high heat until shimmering.
Sear the steak for 3 to 5 minutes per side for a perfect medium-rare, or until it reaches your preferred level of doneness.
Transfer the steak to a cutting board and let it rest for 5 minutes before slicing against the grain to serve with the roasted vegetables.
