Garlic Butter Mashed Potatoes with Seared Chicken
Pan-seared chicken breast served with velvety garlic-infused mashed potatoes that are whipped until perfectly smooth and creamy.
INGREDIENTS
5 oz chicken breast
1 medium Yukon Gold potato
1 tbsp grass-fed butter
0.25 cup non-fat Greek yogurt
2 cloves garlic
0.5 tsp sea salt
0.25 tsp black pepper
1 tsp avocado oil
1 tbsp fresh chives
PREPARATION
Peel and chop the potato into 1-inch cubes.
Place potatoes in a pot of salted water, bring to a boil, and cook for 12 to 15 minutes until fork-tender.
While potatoes cook, season the chicken breast with half of the sea salt and black pepper.
Heat avocado oil in a skillet over medium-high heat and sear the chicken for 6 to 7 minutes per side until the internal temperature reaches 165 degrees Fahrenheit.
Mince the garlic and sauté it in the butter in a small pan over low heat for 1 minute until fragrant.
Drain the potatoes and return them to the pot.
Add the garlic-butter mixture, Greek yogurt, and remaining salt and pepper to the potatoes.
Mash the potatoes thoroughly until they are smooth and creamy.
Serve the seared chicken alongside the mashed potatoes and garnish with chopped fresh chives.
