PREPARATION
Bring a pot of water to a boil and cook the soba noodles according to package directions, then drain and set aside.

Heat the toasted sesame oil in a large skillet over medium-high heat.
Add the ground turkey, minced ginger, and minced garlic to the skillet, breaking up the meat with a spatula until browned and cooked through.
Stir in the chopped baby bok choy and cook for 2 minutes until the leaves are wilted and the stems are tender-crisp.
