PREPARATION
Preheat your oven to 400°F. Scrub the russet potato thoroughly and pierce the skin several times with a fork. Bake for 45-50 minutes until the center is tender.
Once the potato is cool enough to handle, slice it in half lengthwise. Scoop out the center flesh, leaving about a quarter-inch of potato against the skin to create a sturdy boat.
Brush the inside and outside of the potato skins with avocado oil and a light sprinkle of the sea salt. Place them back in the oven for 10 minutes until the edges are golden and crispy.
While the skins crisp, brown the ground turkey and finely diced red bell pepper in a skillet over medium-high heat until the meat is fully cooked and no longer pink.
