Preheat your oven to 375°F.
Heat the olive oil in an oven-safe skillet over medium heat.
Add the ground turkey to the skillet, breaking it apart with a spatula until it is browned and cooked through.
Stir in the diced red bell pepper and yellow onion, sautéing for 5 minutes until the vegetables are softened and fragrant.
Season the mixture with sea salt, black pepper, and smoked paprika, stirring well to combine.
Use the back of a spoon to create four small wells in the turkey and pepper mixture.
Carefully crack one egg into each well.
Transfer the skillet to the oven and bake for 8 to 10 minutes, or until the egg whites are fully set but the yolks are still soft.
Remove from the oven and garnish with chopped fresh parsley before serving warm.
