PREPARATION
Wash and halve the baby potatoes, and slice the carrots and celery into bite-sized rounds.
In a small bowl, whisk together the extra virgin olive oil, dried rosemary, dried thyme, garlic powder, sea salt, and black pepper to create a herb paste.
Rub the herb paste evenly over all sides of the chicken breast.
