PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Slice the sugar pumpkin in half, scoop out the seeds, and brush the inner flesh with half of the olive oil.
Place the pumpkin halves face down on the baking sheet and roast for 45 minutes until the skin is charred and the flesh is tender.
Season the chicken breast with half of the salt and pepper, then roast on the same tray for the final 18-20 minutes of cooking time.
While the pumpkin cools, heat the remaining olive oil in a large pot over medium heat and sauté the diced onion, minced garlic, and chopped sage until fragrant.
