Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Slice the zucchini into rounds, toss with 0.5 tsp of olive oil and half of the sea salt and black pepper, then roast for 15 minutes until tender.
While the zucchini is roasting, heat the remaining 0.5 tsp of olive oil in a large skillet over medium-high heat.
Add the cubed potato to the skillet and cook for 8-10 minutes, stirring occasionally, until the edges are golden and the centers are soft.
Add the diced yellow onion and ground beef to the skillet, breaking the meat apart with a spatula as it browns.
Once the beef is mostly cooked through, stir in the minced garlic, smoked paprika, dried oregano, and the remaining salt and pepper.
Continue cooking for another 3-5 minutes until the beef is fully browned and the potatoes have reached your desired level of crispiness.
Remove the roasted zucchini from the oven, fold it gently into the beef and potato mixture, and serve immediately.
