PREPARATION
Rinse the jasmine rice and cook according to package instructions until light and fluffy.
Slice the chicken breast into thin, bite-sized strips.
Heat the coconut oil in a large skillet or wok over medium-high heat.
Add the chicken strips and sauté for 3-4 minutes until golden on the outside and nearly cooked through.
Push the chicken to the side of the pan and add the green curry paste, stirring for 30 seconds until fragrant.
