Thinly slice the bell peppers and red onion into uniform strips.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Add the steak strips to the skillet and sear for 2-3 minutes until browned and cooked through, then remove the steak and set it aside on a plate.
In the same skillet, sauté the peppers and onions for 3-4 minutes until they are tender and show slight charred edges.
Wipe the skillet clean with a paper towel and place the tortilla in the pan over medium heat.
Sprinkle half of the cheddar cheese on one side of the tortilla, then layer on the cooked steak and saut éed vegetables.
Top the filling with the remaining cheese and fold the tortilla in half.
Cook for approximately 2 minutes per side until the tortilla is golden brown and the cheese is completely melted.
Remove from the heat, slice into three wedges, and serve immediately.
