Classic Garlic Parmesan Pasta
Pan-seared chicken and chickpea pasta tossed in a velvety garlic-infused olive oil sauce with a bright squeeze of lemon and nutty parmesan.
INGREDIENTS
3.75 oz Chicken breast
1.5 oz Chickpea pasta
0.5 tbsp Extra virgin olive oil
2 cloves Garlic
1 tbsp Parmesan cheese
1 tbsp Fresh parsley
1 tsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Red pepper flakes
PREPARATION
Bring a large pot of salted water to a boil and cook the chickpea pasta according to package instructions until al dente, reserving a small amount of pasta water.
Season the chicken breast with sea salt and black pepper on both sides.
Heat a skillet over medium-high heat and cook the chicken for 6-7 minutes per side until golden and the internal temperature reaches 165°F.
Remove the chicken from the skillet, let it rest for 5 minutes, then slice into thin strips.
In the same skillet, reduce heat to low-medium and add the olive oil, minced garlic, and red pepper flakes, sautéing for 1 minute until fragrant.
Add the cooked pasta and sliced chicken to the skillet, tossing thoroughly to coat in the garlic oil.
Stir in the lemon juice and a splash of reserved pasta water if needed to loosen the sauce.
Remove from heat and garnish with fresh chopped parsley and grated parmesan cheese before serving.
