Roast in the oven for 20 to 25 minutes, tossing halfway through, until the vegetables are tender and the Quorn is slightly golden and caramelized.
While the vegetables roast, bring a large pot of salted water to a boil and cook the chickpea pasta according to package directions until al dente.
Reserve two tablespoons of the pasta cooking water, then drain the pasta and return it to the pot.
Add the roasted Quorn and vegetable mixture to the pot along with the minced garlic and reserved pasta water.
Toss everything together over low heat for one minute to allow the flavors to meld and the garlic to become fragrant.
