While the vegetables roast, pat the branzino fillets completely dry with a paper towel and season both sides with the remaining salt and pepper.
Heat the remaining 1 tbsp of olive oil in a large non-stick skillet over medium-high heat.
Place the branzino fillets skin-side down in the hot skillet and press gently with a spatula for 3-4 minutes until the skin is golden and crispy.
Carefully flip the fillets and cook for an additional 1-2 minutes until the flesh is opaque and flakes easily.
In a small bowl, whisk together the minced garlic, lemon juice, and chopped fresh parsley to create a light sauce.
Arrange the roasted vegetables on a plate, top with the crispy branzino fillets, and finish with a drizzle of the lemon-garlic sauce.
