Spread the mushrooms in a single layer on the baking sheet and roast for 18-20 minutes until they are golden brown and tender.
While the mushrooms roast, season the chicken breast with the remaining sea salt and black pepper.
Heat a non-stick skillet over medium-high heat and sear the chicken for approximately 6-7 minutes per side, or until the internal temperature reaches 165°F.
In a small bowl, melt the ghee and stir in the finely chopped fresh parsley.
Once the mushrooms are finished roasting, toss them gently in the parsley-ghee mixture.
Slice the chicken breast and plate it, topping the meat generously with the roasted garlic butter mushrooms.
