Slow-Cooked BBQ Pork Ribs
Tender baby back ribs slow-cooked until they fall off the bone, brushed with a smoky sugar-free BBQ sauce and served with a crisp, tangy vinegar slaw.
INGREDIENTS
6 oz baby back pork ribs
1 tsp smoked paprika
0.5 tsp garlic powder
0.5 tsp onion powder
0.25 tsp sea salt
0.25 tsp black pepper
2 tbsp sugar-free BBQ sauce
1.5 cup shredded green cabbage
1 tbsp apple cider vinegar
0 tsp extra virgin olive oil
0 tsp raw honey
PREPARATION
Pat the ribs dry with paper towels and remove the thin membrane (silver skin) from the back of the ribs if necessary.
In a small bowl, whisk together the smoked paprika, garlic powder, onion powder, sea salt, and black pepper.
Rub the spice blend thoroughly into both sides of the pork ribs.
Place the ribs in the slow cooker, curling them around the inside edge with the meat side facing outward.
Cover and cook on low for 6 to 7 hours, or until the meat is very tender and begins to pull away from the bone.
While the ribs cook, prepare the slaw by whisking together the apple cider vinegar, olive oil, and honey in a large bowl.
Toss the shredded cabbage into the dressing until well coated and refrigerate until ready to serve.
Carefully remove the cooked ribs from the slow cooker and brush the meat side generously with the sugar-free BBQ sauce.
Optional: Place the ribs under a broiler for 3-5 minutes to caramelize the sauce before serving alongside the chilled vinegar slaw.
