Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
In a small bowl, whisk together the olive oil, minced garlic, dried rosemary, dried thyme, sea salt, and black pepper to create a herb paste.
Pat the lamb chops dry with a paper towel and rub the herb paste evenly over both sides of each chop.
Trim the woody ends off the asparagus and place them on one side of the prepared baking sheet, lightly misting with a tiny bit of oil if desired.
Place the seasoned lamb chops on the other side of the baking sheet.
Roast in the oven for 12 to 15 minutes, or until the lamb reaches an internal temperature of 135°F for medium-rare, and the asparagus is tender and slightly charred.
While the lamb roasts, finely chop the fresh mint and stir it into the Greek yogurt.
Remove the lamb from the oven and let it rest for 3 to 5 minutes to allow the juices to redistribute.
Plate the roasted asparagus, top with the herb-crusted lamb chops, and serve with a dollop of the cool mint yogurt sauce.
