Maple Glazed Roasted Carrots with Herbed Chicken
Oven-roasted chicken breast paired with tender carrots glazed in a glossy maple reduction and fragrant fresh thyme.
INGREDIENTS
5 oz Chicken breast
1.5 cup Carrots
1 tbsp Maple syrup
1 tbsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
1 tsp Fresh thyme
PREPARATION
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper for easy cleanup.
Peel the carrots and slice them into half-inch thick diagonal coins to ensure even roasting.
In a small bowl, whisk together the maple syrup, half of the olive oil, and a pinch of the sea salt and black pepper.
Toss the sliced carrots in the maple mixture until every piece is well-coated, then spread them onto one side of the prepared baking sheet.
Pat the chicken breast dry with a paper towel and rub with the remaining olive oil, garlic powder, and the rest of the salt and pepper.
Place the chicken on the other side of the baking sheet and roast for 20 to 25 minutes until the chicken is cooked through and the carrots are caramelized.
Strip the fresh thyme leaves from the stems and sprinkle them over the warm carrots before serving the meal.
