Baked Eggs with Roasted Asparagus
Oven-roasted asparagus spears and farm-fresh eggs baked until just set, finished with a sprinkle of tangy feta and aromatic chives for a vibrant, savory start to your day.
INGREDIENTS
3 large eggs
0.75 cup liquid egg whites
1 cup asparagus spears
1 oz feta cheese
0.5 tbsp extra virgin olive oil
0.25 tsp sea salt
0.25 tsp black pepper
0.5 tsp garlic powder
1 tbsp fresh chives
PREPARATION
Preheat your oven to 400°F (200°C) and lightly grease a small oven-safe baking dish.
Trim the woody ends off the asparagus spears and toss them with the extra virgin olive oil, sea salt, black pepper, and garlic powder.
Place the asparagus on a baking sheet and roast for 8 minutes until they are bright green and slightly tender.
Remove the asparagus from the oven and arrange them into two small circular nests inside the prepared baking dish.
Pour the liquid egg whites into the dish, allowing them to surround the asparagus nests.
Carefully crack the whole eggs into the center of each asparagus nest, being careful not to break the yolks.
Sprinkle the crumbled feta cheese evenly over the top of the eggs and egg whites.
Return the dish to the oven and bake for 10-12 minutes, or until the egg whites are fully opaque and set while the yolks remain soft.
Remove from the oven and garnish with fresh chopped chives before serving warm.
