Pan-Seared Salmon with Roasted Asparagus
Pan-seared salmon fillet served alongside tender roasted asparagus spears, finished with a bright squeeze of lemon and fresh dill.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus spears
1.5 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
1 tsp Lemon juice
0.5 tsp Fresh dill
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss the spears with 0.5 tsp of olive oil and a pinch of the salt and pepper.
Roast the asparagus for 12 to 15 minutes until tender and slightly browned.
Season the salmon fillet evenly with the garlic powder and the remaining salt and pepper.
Heat the remaining 1 tsp of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes per side until the exterior is golden and the center is flaky.
Serve the salmon with the roasted asparagus, drizzling everything with fresh lemon juice and garnishing with fresh dill.
