Slow Cooker Herb-Roasted Chicken
Slow-cooked chicken breast with aromatic herbs and root vegetables for a comforting meal that fills the kitchen with a savory, roasted aroma.
INGREDIENTS
5 oz boneless skinless chicken breast
1 cup carrots, chopped
0.5 cup celery, sliced
0.5 cup yellow onion, diced
4 oz baby potatoes, halved
1 tsp extra virgin olive oil
0.25 cup low-sodium chicken broth
2 cloves garlic, minced
0.5 tsp dried rosemary
0.5 tsp dried thyme
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Place the chopped carrots, celery, onion, and halved baby potatoes in the bottom of the slow cooker.
In a small bowl, whisk together the olive oil, minced garlic, rosemary, thyme, sea salt, and black pepper.
Rub the herb mixture evenly over the chicken breast and place it on top of the vegetables.
Pour the chicken broth around the sides of the chicken, being careful not to wash off the herb rub.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender and the vegetables are soft.
Remove the chicken and slice it, then serve alongside the herb-infused vegetables and juices.
