Herb-Roasted Salmon with Sweet Potatoes and Asparagus
Oven-roasted salmon fillet seasoned with fresh herbs, served alongside caramelized sweet potato cubes and crisp-tender asparagus spears.
INGREDIENTS
6 oz Salmon fillet
0.5 cup Sweet potato
1 cup Asparagus
0.5 tbsp Extra virgin olive oil
0.5 tsp Dried oregano
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Parmesan cheese
1 wedge Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
Peel and cube the sweet potato into small half-inch pieces.
Toss the sweet potato cubes on the baking sheet with half of the olive oil, a pinch of salt, and a pinch of pepper.
Roast the sweet potatoes for 15 minutes until they begin to soften.
Remove the pan from the oven and move the potatoes to one side. Place the salmon fillet and trimmed asparagus on the other side.
Drizzle the remaining olive oil over the salmon and asparagus.
Sprinkle the oregano, garlic powder, remaining salt, pepper, and parmesan cheese evenly over the salmon and vegetables.
Return the pan to the oven and roast for another 10 to 12 minutes until the salmon flakes easily with a fork and the asparagus is tender.
Finish with a fresh squeeze of lemon juice over the salmon before serving.
