Pesto Chicken and Tomato Pasta
Pan-seared chicken breast and whole wheat pasta tossed in a vibrant basil pesto with juicy blistered cherry tomatoes and fresh spinach.
INGREDIENTS
4.5 oz Chicken breast
0.5 cup Whole wheat pasta, cooked
1 tbsp Basil pesto
0.5 cup Cherry tomatoes
1 cup Fresh baby spinach
1 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
1 clove Garlic
PREPARATION
Season the chicken breast evenly on both sides with sea salt and black pepper.
Heat the extra virgin olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and sear until golden brown and cooked through, approximately 5 to 6 minutes per side.
Remove the chicken from the pan and let it rest for a few minutes before slicing into bite-sized strips.
In the same skillet, add the minced garlic and cherry tomatoes, sautéing for 2 to 3 minutes until the tomatoes begin to soften and blister.
Reduce the heat to low and add the cooked whole wheat pasta and fresh baby spinach to the skillet.
Stir in the basil pesto and sliced chicken, tossing constantly until the spinach is just wilted and everything is thoroughly coated and warmed through.
