Loaded Baked Potatoes with Chives
Oven-roasted Russet potato topped with savory ground turkey, sharp cheddar, and a dollop of cool, creamy Greek yogurt.
INGREDIENTS
1 medium Russet potato
0.5 tsp Olive oil
0.25 tsp Sea salt
4 oz Ground turkey (93% lean)
0.25 tsp Garlic powder
0.25 tsp Onion powder
0.25 tsp Black pepper
0.25 oz Sharp cheddar cheese
0.25 cup Non-fat Greek yogurt
1 tbsp Fresh chives
PREPARATION
Preheat the oven to 400°F and line a small baking sheet with parchment paper.
Scrub the Russet potato thoroughly, pierce it several times with a fork, and rub the skin with olive oil and sea salt.
Place the potato on the baking sheet and roast for 45 to 55 minutes, or until the skin is crispy and the center is tender.
While the potato is roasting, heat a non-stick skillet over medium heat and add the ground turkey.
Season the turkey with garlic powder, onion powder, and black pepper, cooking until browned and cooked through, about 7 to 9 minutes.
Once the potato is tender, remove it from the oven and carefully slice it open lengthwise, fluffing the inside with a fork.
Stuff the fluffed potato with the seasoned ground turkey and sprinkle the shredded cheddar cheese over the top.
Return the potato to the oven for 2 to 3 minutes until the cheese is melted and bubbly.
Serve immediately topped with a dollop of Greek yogurt and a sprinkle of freshly chopped chives.
