Preheat your oven to 375°F.
In a small mixing bowl, whisk together the tomato puree, ancho chili powder, ground cumin, garlic powder, sea salt, and black pepper to create the enchilada sauce.
Heat the extra virgin olive oil in a large skillet over medium heat.
Add the diced yellow onion and red bell pepper to the skillet, sautéing until they are softened and fragrant.
Add the ground turkey to the skillet and cook until fully browned, using a spatula to break the meat into small crumbles.
Stir 2 tablespoons of the prepared ancho sauce into the turkey and vegetable mixture to keep the filling moist.
Warm the corn tortillas in a dry pan or microwave for a few seconds until they are pliable and easy to roll.
Divide the turkey filling evenly between the two tortillas, roll them up tightly, and place them seam-side down in a small baking dish.
Pour the remaining ancho sauce over the top of the rolled tortillas and sprinkle evenly with the shredded cheddar cheese.
Bake for 10 to 12 minutes until the sauce is bubbling and the cheese is completely melted.
Garnish with fresh chopped cilantro before serving.
