Slow Cooker Herb Chicken and Vegetables
Slow-cooked chicken breast and tender root vegetables simmered in a fragrant herb-infused broth for a comforting and savory meal.
INGREDIENTS
5.5 oz boneless skinless chicken breast
0.5 cup carrots
0.5 cup celery
0.5 cup yellow onion
4 oz baby Yukon Gold potatoes
1 cup low-sodium chicken broth
0.5 tbsp extra virgin olive oil
1 tsp dried thyme
1 tsp dried rosemary
0.5 tsp garlic powder
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Prepare the vegetables by peeling and slicing the carrots, dicing the celery and onion, and halving the baby potatoes.
Place the carrots, celery, onion, and potatoes in the bottom of the slow cooker.
Drizzle the olive oil over the chicken breast and season both sides evenly with dried thyme, rosemary, garlic powder, sea salt, and black pepper.
Lay the seasoned chicken breast on top of the vegetables in the slow cooker.
Pour the chicken broth around the sides of the chicken, being careful not to wash off the seasonings.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender and the vegetables are soft.
Remove the chicken and slice or shred it before serving alongside the vegetables and a portion of the cooking liquid.
