Preheat your oven to 400°F (200°C).
Scrub the potato clean, pat dry, and prick several times with a fork to allow steam to escape.
Rub the potato skin with olive oil and a pinch of sea salt, then place it directly on the oven rack for maximum crispness.
Bake for 45-60 minutes until the skin is crisp and the inside is tender when pierced with a knife.
While the potato bakes, heat a non-stick skillet over medium-high heat and add the ground turkey.
Season the turkey with garlic powder, onion powder, the remaining sea salt, and black pepper, breaking it into small crumbles as it browns.
Cook the turkey until fully browned and cooked through, about 7-10 minutes, then remove from heat.
Once the potato is done, slice it open lengthwise and fluff the inside gently with a fork.
Stuff the potato with the cooked ground turkey and top with a generous dollop of Greek yogurt.
Garnish with freshly chopped chives and serve immediately while hot.
