Sweet Chili Garlic Shrimp Skillet
Succulent shrimp sautéed with crisp bell peppers and tossed in a creamy, spicy-sweet glaze for a vibrant and satisfying skillet meal.
INGREDIENTS
8 oz Shrimp
0.5 tbsp Avocado oil
0.25 cup Plain Greek yogurt
2 tbsp Sweet chili sauce
1 tsp Sriracha
1 tsp Garlic
2 cup Shredded cabbage
0.5 cup Red bell pepper
0.25 tsp Sea salt
0.25 tsp Black pepper
2 tbsp Green onions
PREPARATION
In a small bowl, whisk together the Greek yogurt, sweet chili sauce, and sriracha until smooth and set aside.
Pat the shrimp dry with paper towels and season them evenly with sea salt and black pepper.
Heat the avocado oil in a large skillet over medium-high heat.
Add the sliced red bell peppers and shredded cabbage to the skillet, sautéing for 3 to 4 minutes until the vegetables are tender-crisp.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Push the vegetables to the edges of the pan and add the shrimp to the center, cooking for 2 minutes per side until pink and opaque.
Reduce the heat to low, pour the chili-yogurt sauce over the shrimp and vegetables, and toss everything together until well-coated and warmed through.
Remove from heat and garnish with freshly sliced green onions before serving.
